INGREDIENTS:
• Tamarind – 1 small lemon size
• Shallots / Sambar Onion – 20 chopped finey
• Tomato – 1 large chopped finely
• Green Chillies – 4 slit
• Garlic – 5 cloves sliced
• Kashmiri Chilli Powder – 2 tblsp
• Cumin Powder – 2 tsp
• Turmeric Powder – 1 tsp
• Salt to taste
• Gingelly Oil / Nala Ennai / Sesame Oil – ½ cup
• Water – 1 cup
• Dried Anchovies (Nethili Karuvadu) – 100 gms INSTRUCTIONS:
1. Soak dried fish in warm water for 10 mins. Drain and set aside.
2. Take tamarind in a bowl, add water and soak for 10 mins. Drain and take it in an earthenware pot.
3. Add in chopped onions and all ingredients except oil and fish.
4. Bring it to a boil, boil for 5 mins.
5. Now add in oil and boil for 5 more mins.
6. Add Dried fish and cook till dried fish is cooked.
7. Take it off the heat and let it stand for an hour for the flavour to develop.
8. Serve with rice.
DRIED SARDINE FRY
INGREDIENTS:
• Dried Fish (Sardine)or any full fish - 200 gms
• Chilli powder - 1 tsp
• Salt a pinch
• Turmeric powder - 1 tsp
• Lemon Juice - half a lemon + 1 tblspn
• Onion - 1 sliced
• Curry leaves - 1 spring
• Oil for shallow frying INSTRUCTIONS:
1. Take the dry fish and soak them in water for 5 mins.
2. Take it out
3. Mix that with chilli powder, turmeric powder, salt, lemon juice.
4. Heat oil and add in the fish.
5. Fry it for 5 mins on either side till it is cooked and golden.
6. Now remove them to a plate.
7. In the remaining oil, add in onions, curry leaves and saute for a min.
8. Squeeze in 1 tblspn of lemon juice and mix well.
9. Spoon this over the fried fish and serve with rice.
Dried Maldives Fish - Sambal
INGREDIENTS
• Maasi (dried Maldives fish) - 100 grams already pounded
• Coconut - 1.5 cup grated
• Oil - ¼ cup
• Garlic - 3 clove crushed
• Curry leaves a handful
• Onion or shallot - 1 large chopped
• Salt to taste
• Lemon juice - 2 tblspn INSTRUCTIONS
• Mix coconut and masi together. Set aside.
• Heat oil in a pan, add garlic and curry leaves.
• Add in onion and cook that for a min.
• Add the masi and coconut mix. Saute this on low heat for 10 mins or so, till the mix gets crispy.
• Add salt to taste.
• Now take it off the heat and add lemon juice. Mix well.
• Serve with rice, appam or idiyappam.
